Really, if you are simply drinking still wines; please transfer. Did  you know that bubbles are the most food versatile wine on the planet? They can be paired with just about anything. From vintage to non-vintage; from cheap (I'm sorry, inexpensive) to pricey; these are some food friendly fiends! Enjoy.....and try.

Thy
75 degrees of nostalgia

I understand that we have a lot of converted Dallasites here in town—I being among them—and that many of them aren’t used to the Texas summer heat.  Even most Texans complain when the thermometer spikes in the triple-digits.  But was I the only one who got up this morning, stepped outside and cried, “brrrr…?"  This happens every year.  I get used to the sun.  I’m not longer bothered by the suspicion that God is sitting up there laughing his omnipresent ass off while gunning me down with his hairdryer like a child with a magnifying glass.  Then, like today, that cold, dry northern rolls in and drives the mercury down into the seventies, which seems to please just about everybody but me.  Personally, I like to sweat.  And I also like drinking rosé, provancal rosé, which is something that I can only do in good conscious when it’s sweltering outside.  So as autumn descends upon us, and sweaters and coats become de rigeur, I look forward to breaking out some Port and strong, red wine, but at the same time, I know that the days that I can sit on my balcony in my sweaty underwear sipping ice-cold Baux du Provence are numbered.  At least for this year.  And that makes me sad.

Yummy~ Cescon Italo Pinot Grigio

From Friuli, in the Northeast part of Italy, this Pinot Grigio is stellar! Fermented in stainless steel, this white has crisp acidity, yet retains its characteristic minerality and mouthfeel. With a nose of slate, and a hint of apple, it goes on to a mouthfeel of minerals and finishes quick and clean. All this wrapped in one of the sexiest packages we've seen in a while. In the old days, wines were identified by the type of grapevine that produced the wine. A small piece of pruned vine would be tied to the bottles. The folks at Italo Cescon have revived this tradition to showcase what we think is one of the most exciting wines from the region in a while.

This wine is very versatile because of its acidity. Don't let that word alarm you, acidity is what makes these wines so food-friendly. Enjoy it by itself, or pair it with fresh oysters, a chilled lobster salad, or a round of brie. This is a perfect picnic and party wine!
